In the summer season, the first fruit that comes to my mind is WATERMELON.

So today, I made a watermelon-flavored cheesecake. The bottom of the cake is made from crispy cookies, the top layer is a creamy Italian-style soft cheesecake, in the middle is fresh watermelon jello, and the third layer is also creamy Italian-style soft cheesecake. The watermelon seeds are decorated with chocolate chips in the shape of watermelon seeds.

Watermelon Cheesecake (6 inch)

Cake Base:

- Cookies 150g

- Butter 80g

- Edible Food Color (Green – less than 1 drop)

Cheesecake:

- Cream Cheese 250g

- Sugar 50g

- Whipped Cream 100mL

- Gelatin Powder 10g (+ Room Temperature Water 50ml)

- Edible Food Color (Red - less than 1 drop)

Watermelon Jello:

- Watermelon Juice 250mL OR Fresh Watermelon 380g (Place the fresh watermelon into a blender and blitz to make watermelon juice, 250mL)

- Gelatin Powder 10g (+ Water 50mL) OR Watermelon Jello 1 packet (+ Water 45mL), put the Jello Crystal into the water and stir well.

Watermelon Seeds:

- Chocolate Chips 50g

Instructions:-

Place the watermelon into a blender and blend it to make fresh watermelon juice.

Add sugar to 250mL watermelon juice and mix in melted gelatin, mix. Pour it into a circle mold, and put it in the freezer for 2 hours.

Place cookies into a blender and crush them into fine crumbs. Melt the butter in the microwave or on the stovetop, then add the cookies crumbs and green food coloring. Press it firmly onto the bottom of a mold and refrigerate it.

Whip the cream, dilute it by 50%, then add sugar, mixing well. Next, add softened cream cheese and melted gelatin, and mix thouroughly.

Pour a small amount into the mold and let it harden in the freezer for about 10 minutes. Add a little bit red food coloring to the remaining cheesecake batter and mix.

Add the watermelon jello into the mold, then pour in the remaining batter.

Place it in the fridge.

Melt the chocolate chips in the microwave or on the stovetop.

Remove the mold and pepe the chocoalte chips into the shape of watermelon seeds.
