Chiffon Cake Recipe (6-inch)

Ingredients:

- Egg 3pcs

- Sugar 60g

- Milk 40g

- Corn Oil 35g

- Corn Starch 5g

- Cake Flour 40g

- Chocolate Powder 10g

Tools:

- Round Cake Mold (6-inch)

- (A) Mixing Bowl, Large Size

- (B) Mixing Bowl, Medium size

- (C) Mixing Bowl, Small Size

- Spatula

- Egg Whisks

- Cake cooling rack

Instructions:

(1) Preheat the oven to 325°F

(2) In a mixing bowl (A). Egg Yolks, Corn Oil and Milk. Set aside.

(3) In a mixing bowl (B). Beat the egg whites with corn starch until foamy. Gradually add 60g of sugar and continue beating until stiff and glossy. Set aside.

(4) Mixing Bowl, Egg Yolks (A). Whisk attachment to beat the Corn Oil and Milk, reserved egg yolks until pale yellow. Add the flour in thirds, beating at medium speed for 2 to 3 minutes.

(5) Gently fold in the whipped egg whites with a whisk just until the batter is uniform. Scrape the bottom of the bowl to ensure the batter is evenly mixed.

(6) In a mixing bowl (C). Put a small amount of batter in a small mixing bowl. Add some to the cake mold and shape it into a monkey face. Then, lay the mold flat on its side and place it in the oven for around 5minutes.

(7) Add Chocolate Powder to the remaining batter, gently fold in the whipped egg whites with a whisk just until the batter is uniform. Scrape the bottom of the bowl to ensure the batter is evenly mixed.

(8) Pour the batter into the cake mold. Bake for 35-45 minutes without opening the oven. The cake will rise high above the pan then settle back almost even as it continues to bake.

(9) Increase the oven temperature to 350°F and bake for 10 minutes more, until a gentle touch on the center of the cake leaves no indent.

(10) Remove the cake from the oven and invert the cake mold over on the cake cooling rack for 30 minutes. After 30 minutes, turn the cake out onto a serving plate to finish cooling completely.

Storage the cake:

Store leftover cake, well wrapped, at room temperature for several days. Freeze for longer storage.
